The ingredients needed to make Veg Dirty Rice:
- Get 500 gms rice
- You need 100 grams soya chunks
- Prepare 250 gms potatoes
- Prepare 1/2 cup baked beans
- Take 2 onions sliced
- Take 2 tbsp ginger garlic paste
- Get 1 tbsp coriander powder
- You need 1 tsp chilli powder
- Prepare 2 Green cardamoms
- Take 2 cloves
- Provide 1 small cinnamon
- Get 1 cup oil
- Provide 1 tomato sliced
- You need 1 tsp coriander chopped
Instructions to make Veg Dirty Rice:
- Wash rice and soak for 30 mins. Then boil the rice along with the cardamom, cloves and cinnamon, and 3 tsp salt. Drain off excess water and keep aside.
- In a separate pot heat oil and deep fry the diced potatoes with a little saffron colour and salt and keep aside.
- Reduce oil to 2tbsp and fry the sliced onions till golden brown, add the sliced tomatoes and fry, then add the ginger-garlic paste, cook for 2 mins. Add salt, coriander powder, chilli powder and mix well. Add a little water and cook till the oil leaves sides
- Add the soya chunks to it and fry, add baked beans and mix. Then add 2 cups water and cook till the soya is soft and water is reduced then add the boiled rice and fried potatoes to it. Mix well and dirty rice is ready.
- Garnish with some chopped coriander and serve hot.
