  1. Prepare small eggplant/brinjal/bengan, chopped length wise
  2. You need large onion chopped lengthwise, finely
  3. You need green chill,slit length wise
  4. You need chopped garlic

  7. Get ponch phoran
  8. You need turmeric powder

  1. Heat oil in a kadhai. Add dry chillies and ponch phoran. Allow phoran to splutter.
  2. Add chopped garlic and slit green chillier. Saute for 1 minute.
  3. Add chopped onion then. Mix salt and turmeric powder and saute till onions and transparent.
  4. Add chopped eggplant and tomatoes. Mix well. Cover and cook till brinjal get cooked on low heat.
