  2. Get 1 packages family size tortellini
  3. You need 2 yellow squash
  4. You need 3 zucchini
  5. Prepare 1 can red kidney beans
  6. You need 45 oz chicken broth or stock
  7. Take 4 clove garlic
  8. Use 4 celery
  9. Get 1 can stewed tomatos
  10. Prepare 1/4 cup worcestershire sauce or soy
  11. Prepare 1 ground black pepper
  12. You need thyme leaves dried
  13. Take rosemary
  14. You need sage
  15. You need 1 stock pot
  16. You need 2 anahiem peppers
Instructions to make Veggie & tortellini soup:
  1. In seperate pan boil anaheim peppers for 3 to 10 mins or so until you can peel skin off. Then chop
  2. Chop onion and garlic into chunks (not minced) add to stock pot along with tablespoon of pepper , 2 tbsp ground sage, 1tbsp thyme and 1 tbsp rosemary. Heat on medium low heat until onions are soft. Aprox 3 to. 5 mins
  3. Chop all remaining vegetables and add to stock pot.
  4. Add can of tomatoes. Or fresh cut if perferred.
  5. Add aprox 2 cups chicken broth. Bring to boil then simmer.add worshishire sauce aprox 1/4 cup.add kidney beans, Simmer for aprox 5 to 10 mins stirring ocasionally.
  6. Add remaining chicken broth and 3 cups water. Bring to boil and then simmer for a few mins. At this point i taste and add more seasoning if need be. Usually not.
  7. Finally add tortellini and cook to package directions.
