  1. Get 2 centre-cut salmon fillets, deboned and skin-on
  2. Provide 1/3 cup fresh orange juice (I actually used mandarins)
  3. Prepare Juice of 1/2 lemon
  4. Provide 3 cloves garlic, finely grated
  5. Take 1 thumb-sized nub ginger, finely grated
  6. Provide 1/4 cup dark soy sauce

  1. Add a splash of veg oil to a large nonstick pan on medium-high heat. Season the salmon fillets with salt and pepper and sear them skin-side down for 3 minutes. Flip the fillets over and sear for 3 minutes on the other side. Remove the salmon to a plate.
