- Get 4 chicken quarters
- Prepare 1/2 cup plus 1 tbsp unsalted butter
- Get 6 fresh sage leaves
- Get 1 sprig fresh tarragon

- Season the chicken quarters with salt and leave them uncovered inside the fridge for at least 1 day, and up to 3 days.
