- You need 3-4 Fajita sized tortillas
- Provide 3 cups Mexican style shredded cheese
- Use 1 (10 oz) can diced tomatoes & green chiles
- Prepare 1 (24 oz) can red enchilada sauce
- Use 1 lb ground meat of your choice
Steps to make Enchilada Stack:
- Preheat oven to 350°.
- Brown meat in skillet, drain if necessary. Season to taste (I use minced onion, salt and pepper).
- In mixing bowl, combine tomatoes, chiles, 3/4 of enchilada sauce, and meat.
