  2. Provide 1 tbsp Olive oil
  3. You need 1 Red onion cut into thick slices
  4. Provide 1 cup Pitted Kalamata olives

  6. Prepare 1 dash Salt and pepper
  7. You need 1 tsp Greek seasoning
  8. Get 4 clove of garlic peeled
  9. Prepare 1/2 cup Hummus
  10. Provide 1 tsp Paprika
  11. Get 1 pints Cherry tomatoes
  12. Prepare 1 tsp Balsamic vinegar

  1. Preheat oven to 450°F Zest one lemon. Place zest in bowl and add olive oil, onions and olives. Toss to coat and place at bottom of baking dish.
  2. Cut chicken into tenders (slice parallel to cutting board and cut each half into 3. Season with salt, Greek seasoning and pepper and place on top of bed of onions/ olives. Tuck garlic under chicken to keep from burning.
