- Take 4-5 lbs carrots, roughly chopped up
- Take 1 medium onion, diced
- You need 2-3 garlic cloves, minced
- Provide 2-3 tbsp freshly ground ginger(or 2-3 tsp of ground ginger)
- Prepare 4-5 cups low sodium chicken stock/broth
- Prepare 1 cup coconut milk(or heavy cream or half & half)
