- Take 350 g Chicken Meat (cut into bite size)
- Take 20 g Spring Onions (finely chopped)
- Provide as needed Cooking Oil (deep frying)

- Get 1 pc Egg (whisked)
- Get 1 Tbsp Fish Sauce
- Get 2 pinch White Pepper
- You need [Coating]
- Take 1/2 cup All Purpose Flour
- Prepare 1/2 cup Corn Flour
- Use [Thai Sweet Chilli Sauce] or just use store bought
- Use 40 g Red Chillies (blend)
- Prepare 20 g Garlic (blend)
- Take 20 g Shallots (blend)
- Get 1/2 cup Sugar
- You need 1/4 Vinegar
- Get 2 tsp Fish Sauce
- Provide [Thickener] - mix well
- Take 1 Tbsp Corn Flour
- You need 2 Tbsp Water

- MARINADE: marinate the Chicken in Egg, Wgite Pepper and Fish Saice for 30 minutes or more
- SAUCE: in a pot, add the Blended Red Chillies, Garlic and Shallots, with the Sugar, Vinegar and Fish Sauce. Cook until the color brightens and the liquid has reduced a bit (add water if it is too dry). Then add the Thickening solution and cook until the Sauce thickens. Remove and set aside.
