The ingredients needed to prepare Suji squares:
- Prepare 1 cup Suji
- Get 1 tbsp Fruit salt /eno
- You need to taste Salt
- Take 1 tbsp Mustard seeds
- You need 2 slit Green chillies
- Prepare 3/4 cup Water for batter
- Get 1/2 cup Curd
- Prepare 2 Boiled potatoes grated
- Take 1 tbsp Cumin seeds
- Prepare 1 tbsp Mustard seeds
- Take 2 spring Curry leaves
- Get 1/2 tbsp Turmeric powder
- Get 1 tbsp Coriander powder
- Prepare 1 Onion chopped
- Use 5-6 tbsp Oil
- Prepare 1 tbsp Lemon juice
- Provide to taste red chilli powder
- Get 2 tbsp Sambhar masala
- Take 1 pinch baking soda
Instructions to make Suji squares:
- For stuffing: Take a pan add oil heat well. Add cumin seeds, mustard seeds and let them splutter. Add curry leaves, 1 green chilli chopped. Saute it well.
- Add chopped onion saute it for 2 mnts then add all spices mix it well then add grated potatoes and cook it for 2 to 3 mnts. Switch off gas. Keep it a side. Let it cool down.
- For batter: Take a bowl. Add suji salt per taste, curd,lemon juice,a pinch baking soda mix it well. Add water and if required.
- This should be lump free and of flowing consistency. Beat it with a hand beater for 2 to 3 minutes.
- Add 2 tbsp of oil and mix it well, keep it aside for 15 minutes.
- After 10 minutes grease microwave save square shape glass with oil properly.
- Add eno and mix it well.
- Knead a dough of stuffing material and bind it into cylindrical shape.
- Place a little batter in glass. Then place stuffing dough in the mid of glass then pour some more batter in glass.
- The batter should be pour than half of glass.
- Microwave it near about 7 to 8 minutes.
- If you want to cook it on gas.place huge utensil. Add some water place a stand in it then place steel glass in it and cook for 15 to 20 minutes.
- For tadka: Take a pan add 2 tbsp oil in it heat well add mustard seeds and let it splutter. Then add green chilli and curry leaves saute it. Then add a little bit of water and then add spices saute it then all suji squares proprly from all sides in that masala.
- After this cut the pieces of suji squares with the help of knife and serve with green chutney.
