The ingredients needed to prepare Sweet Potato Barfi:
  1. Provide 1/2 kg Sweet Potato (boiled and mashed)
  2. Prepare 3-4 tbsp beetroot juice
  3. Get 400 gm Milkmaid
  4. Take 4-5 tbsp Desicated coconut powder
  5. Get 2-3 tbsp Ghee
  6. Take 1/2 tsp Green Cardamom powder
  7. Get as needed finely chopped nuts (Almond, Cashew nuts)
  8. Take 8-9 Raisins
  9. Prepare as needed Pistachio to garnish
Steps to make Sweet Potato Barfi:
  1. Boil, peel and mash shakarkandi
  2. In a heavy bottom pan add ghee, add shakarkandi and cook 4_5 minutes.
  3. Add beetroot juice and cook few minutes, then add milkmaid, green cardamom powder, desicated coconut powder and cook few more minutes.
  4. Keep on cooking till it starts leaving the sides of pan and changes into a lump.
  5. Take off the flame, put in the greased plate and spread to form a uniform layer.
  6. Garnish with pistachio, cool it and cut into desired shape
