- Preparing salsa : Take all the ingredients mentioned under salsa. Roughly chop the onions, tomatoes and chillies. Pulse them in the mixer. The salsa should be slightly chunky and not a runny paste. Remove in a bowl and set aside.
- For Mexican rice : Heat oil in a vessel, add the chopped garlic and Chilli flakes. Saute for a few seconds. Now add some of the spring onions. Add rice and roast for a few seconds. - For baked beans : Heat oil, add chopped garlic, Chilli flakes and saute, add red chilli powder, spring onions and the baked beans. Mix well. Simmer for few minutes.
- For stir fried veggies : Heat oil. Add chopped garlic, red chilli powder, cumin powder, salt and pepper powder. Saute for a few seconds. Add the onions and other veggies,Stir fry for a few minutes and set aside. Now we have everything ready to assemble the burritos.
- Assembling of the Burritos.. Take a tortilla in a plate. First add a big spoonful of rice, then add baked beans, add salsa, stir fried veggies, pickled jalapenos, sour cream, grated cheese and lettuce. Fold the burritos by tucking in the sides. Heat a grill pan and smear some oil on it. Place the burritos on the pan and cook for a few minutes from both sides. Enjoy with some nachos, salsa and sour cream at the side.
